Fluffy Oladi Ukrainian Pancakes
Ingredients for Oladi:
1 cup plain yogurt
1 large egg
2 tablespoons granulated sugar
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
Oil for frying vegetable or sunflower oil recommended
Directions:
In a large bowl, whisk together the yogurt, egg, sugar, and vanilla extract until smooth.
In a separate bowl, combine the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients and stir until a thick batter forms.
Heat a large skillet over medium heat and add enough oil to lightly coat the bottom.
Drop spoonfuls of batter onto the skillet, forming small pancakes about 2-3 inches in diameter.
Cook each pancake for 2-3 minutes on each side, or until golden brown and cooked through.
Remove from the skillet and drain on paper towels. Serve warm with your favorite toppings like jam, sour cream, or fresh berries.
