Cheese Stuffed Pretzels
Ingredients for Cheese-Stuffed Pretzels:
1 1/2 cups warm water
1 packet 2 1/4 teaspoons active dry yeast
1 tablespoon granulated sugar
4 cups all-purpose flour
1 teaspoon salt
2 tablespoons unsalted butter, melted
8 ounces cheese, cut into small cubes cheddar or mozzarella recommended
1/3 cup baking soda
10 cups water for boiling
Coarse salt, for sprinkling
Directions:
In a large bowl, combine the warm water, yeast, and sugar. Let it sit for 5 minutes until the mixture becomes frothy.
Add the flour, salt, and melted butter to the yeast mixture. Stir until a dough forms, then knead on a floured surface for about 5 minutes until smooth and elastic.
Place the dough in a lightly greased bowl, cover, and let it rise in a warm place for 1 hour, or until doubled in size.
Preheat your oven to 450F 230C and line a baking sheet with parchment paper.
Punch down the dough and divide it into 8 equal pieces. Roll each piece into a rope, flatten it slightly, and place a cheese cube in the center. Wrap the dough around the cheese, sealing the edges, and shape it into a pretzel.
Bring 10 cups of water to a boil in a large pot. Slowly add the baking soda.
Carefully dip each pretzel into the boiling water for about 30 seconds, then remove with a slotted spoon and place on the prepared baking sheet.
Sprinkle the pretzels with coarse salt and bake for 12-15 minutes, or until golden brown and the cheese is melted inside.
