Easy Taco Soup Recipe
Hearty and Flavorful Taco Soup with Beef and Beans
Ingredients:
1 lb ground beef
1 onion, diced
1 15 oz can black beans, drained and rinsed
1 15 oz can pinto beans, drained and rinsed
1 15 oz can corn, drained
1 15 oz can diced tomatoes with green chilies
1 15 oz can tomato sauce
2 cups beef broth
1 packet taco seasoning
1 packet ranch seasoning mix
Optional toppings: sour cream, shredded cheese, cilantro, tortilla chips, avocado
Directions:
In a large pot or Dutch oven, cook the ground beef over medium heat until browned, breaking it up into small pieces as it cooks. Drain excess fat if necessary.
Add the diced onion and sauté until softened, about 4-5 minutes.
Stir in the taco seasoning and ranch seasoning mix, cooking for another 1-2 minutes until fragrant.
Add the black beans, pinto beans, corn, diced tomatoes with green chilies, tomato sauce, and beef broth. Stir to combine.
Bring the soup to a boil, then reduce the heat to low. Simmer for 15-20 minutes to let the flavors meld together.
Taste and adjust seasonings if needed. Serve hot with your choice of toppings.
