Easy Chicken Noodle Soup Recipe

Ingredients:

1 lb chicken breast or thighs boneless and skinless

1 tbsp olive oil

1 onion, finely chopped

2 carrots, sliced

2 celery stalks, sliced

3 garlic cloves, minced

8 cups chicken broth

2 cups egg noodles

1 bay leaf

1 tsp dried thyme

1 tsp dried parsley

Salt and pepper to taste


Fresh parsley, chopped for garnish

Lemon wedges optional

Directions:

Heat olive oil in a large pot over medium heat. Add the chopped onion, carrots, and celery, and sauté for 5-6 minutes until softened.

Add the minced garlic and cook for 1 minute, until fragrant.

Pour in the chicken broth, and add the bay leaf, thyme, parsley, and season with salt and pepper. Stir well.

Add the chicken breasts whole to the pot. Bring the soup to a boil, then reduce heat to low and simmer for 20-25 minutes until the chicken is fully cooked.

Remove the chicken from the pot, shred it with two forks, and return the shredded chicken to the soup.

Add the egg noodles and cook for 6-8 minutes, or until the noodles are tender.

Taste the soup and adjust seasonings if needed. Serve hot, garnished with fresh parsley and a squeeze of lemon, if desired.
