Easy Tomato Soup
Creamy and Rich Tomato Soup with Fresh Basil
Ingredients:
2 tbsp olive oil
1 onion, finely chopped
2 garlic cloves, minced
2 tbsp tomato paste
1 28 oz can crushed tomatoes
4 cups chicken or vegetable broth
1/2 cup heavy cream
1 tsp sugar
1/2 tsp dried oregano
Salt and pepper to taste
Fresh basil leaves, for garnish
Parmesan cheese, grated optional
Directions:
Heat olive oil in a large pot over medium heat. Add the chopped onion and sauté for 5-6 minutes until softened.
Add the minced garlic and cook for 1 minute, until fragrant.
Stir in the tomato paste and cook for another minute to deepen the flavor.
Add the crushed tomatoes, broth, sugar, oregano, salt, and pepper. Stir to combine.
Bring the soup to a simmer and cook for 20 minutes, allowing the flavors to meld.
Remove from heat and blend the soup until smooth using an immersion blender, or carefully transfer to a blender in batches.
Stir in the heavy cream and taste for seasoning, adding more salt and pepper if needed.
Serve hot, garnished with fresh basil leaves and a sprinkle of Parmesan cheese, if desired.
