Apple Hand Pies

Flaky Cinnamon Apple Hand Pies

Ingredients:

For the Dough:

2 cups all-purpose flour

1 teaspoon salt

1 tablespoon granulated sugar

1 cup unsalted butter, cold and cubed

cup ice water

For the Apple Filling:

2 large apples, peeled, cored, and diced

2 tablespoons granulated sugar

1 tablespoon brown sugar

teaspoon cinnamon

teaspoon nutmeg

1 tablespoon lemon juice

1 tablespoon all-purpose flour

For the Egg Wash:


1 egg

1 tablespoon milk

For the Glaze:

1 cup powdered sugar

2 tablespoons milk

teaspoon vanilla extract

Directions:

In a large bowl, whisk together the flour, salt, and sugar. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs. Gradually add the ice water, stirring just until the dough comes together. Divide the dough into two discs, wrap in plastic, and refrigerate for at least 1 hour.

In a medium bowl, combine the diced apples, granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and flour. Stir until the apples are evenly coated. Set aside.

Preheat your oven to 375F 190C. Line a baking sheet with parchment paper.

On a lightly floured surface, roll out one of the dough discs to about inch thick. Cut out circles about 4 inches in diameter using a round cutter or a glass. Repeat with the second disc.

Spoon about 1 tablespoon of the apple filling onto one half of each dough circle, leaving a small border around the edges. Fold the dough over the filling and crimp the edges with a fork to seal.

Place the hand pies onto the prepared baking sheet. In a small bowl, whisk together the egg and milk, and brush the tops of the pies with the egg wash.

Bake for 20-25 minutes, or until the pies are golden brown. Remove from the oven and allow to cool slightly.

In a small bowl, whisk together the powdered sugar, milk, and vanilla extract to make the glaze. Drizzle the glaze over the warm hand pies before serving.
