Decadent Caramel Apple Cheesecake Bars with Streusel Topping
Ingredients:
For the Crust:
2 cups graham cracker crumbs
1/2 cup unsalted butter, melted
1/4 cup granulated sugar
For the Cheesecake Layer:
16 oz cream cheese, softened
1/2 cup granulated sugar
1 tsp vanilla extract
2 large eggs
For the Apple Topping:
3 large apples, peeled, cored, and diced
2 tbsp granulated sugar
1/2 tsp ground cinnamon
For the Streusel Topping:
1/2 cup old-fashioned oats
1/2 cup light brown sugar
1/2 cup all-purpose flour
1/2 cup cold unsalted butter, cubed
For the Caramel Drizzle:
1/2 cup caramel sauce
Directions:
Preheat oven to 350F 175C. Line a 9×13-inch baking dish with parchment paper.
In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Press mixture into the bottom of the prepared pan.
In a large mixing bowl, beat cream cheese, sugar, and vanilla extract until smooth. Add eggs, one at a time, beating after each addition. Pour the cheesecake mixture over the crust.
In another bowl, toss diced apples with sugar and cinnamon. Sprinkle evenly over the cheesecake layer.
In a separate bowl, combine oats, brown sugar, flour, and cubed butter. Mix with your fingers until the mixture becomes crumbly. Sprinkle the streusel over the apple layer.
Bake for 35-40 minutes, or until the cheesecake is set and the streusel is golden brown.
Allow the bars to cool completely, then drizzle with caramel sauce before slicing and serving.
