No-Bake Vanilla Cheesecake

Ingredients:
Biscuit Base:
300 g digestive biscuits
150 g unsalted butter 杻
Vanilla Cheesecake Filling:
750 g full-fat cream cheese like Philadelphia or Mascarpone 燎
100 g icing sugar
1-2 tsp vanilla extract
300 ml double cream 拏
1 tbsp lemon juice optional
Optional Topping:
150 ml double cream 拏
2 tbsp icing sugar

Instructions:
For the Biscuit Base:
1 Prepare Biscuits: Blitz the digestive biscuits in a food processor until they resemble fine crumbs. Alternatively, place them in a bag and crush with a rolling pin.
2 Melt Butter: Melt the unsalted butter until liquid, then mix it with the crushed biscuits. You can pour it directly into the food processor and blitz to combine.
3 Press Into Pan: Press the biscuit mixture firmly into the bottom of an 8″” 20 cm springform deep tin. Refrigerate or freeze while you prepare the filling.
For the Cheesecake Filling:
4 Mix Ingredients: In a large bowl or stand mixer, add the cream cheese, icing sugar, vanilla extract, and lemon juice if using. Whisk until smooth.
5 Add Cream: Pour in the double cream and whisk until thickened. Alternatively, you can whip the cream separately until stiff peaks form and gently fold it into the cream cheese mixture.
6 Combine: Once thickened, pour the cheesecake mixture over the prepared biscuit base. Smooth the top with a spatula.
7 Chill: Set the cheesecake in the fridge for 5-6 hours or preferably overnight to allow it to firm up.
For Decoration:
8 Whip Topping: Whip the double cream with icing sugar until pipeable. Decorate your chilled cheesecake with the whipped cream as desired.
