Hawaiian Pineapple Cake
This tropical delight is a moist and flavorful cake made with crushed pineapple and topped with rich cream cheese frosting. With a hint of vanilla and an optional coconut garnish, this cake will transport you straight to the islands!
Ingredients:
For the Cake:
2 cups all-purpose flour
2 cups sugar
2 eggs 讀
1 teaspoon baking soda
1 teaspoon vanilla extract
Pinch of salt 蓼
1 20 oz can crushed pineapple undrained in its own juice
1 cup chopped nuts optional
For the Cream Cheese Frosting:
cup butter 1 stick, softened 杻
1 8 oz package cream cheese, softened 燎
1 teaspoon vanilla extract
1 cups confectioners sugar
Coconut for garnish optional 便
Directions:
1 Preheat Oven:
Preheat your oven to 350F 175C and grease a 9×13-inch baking pan.
2 Mix the Batter:
In a large bowl, mix together the flour, sugar, eggs, baking soda, vanilla extract, and salt until well combined.
Stir in the crushed pineapple including its juice and chopped nuts if using.
3 Bake:
Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
Let the cake cool completely before frosting.
4 Make the Cream Cheese Frosting:
Beat the softened butter and cream cheese together until smooth. Add in the vanilla extract and gradually mix in the confectioners sugar until fully combined. 療
5 Frost the Cake:
Once the cake has cooled, spread the cream cheese frosting evenly over the top.
Sprinkle with coconut optional for garnish. 便
