Blackberry, Sage, and Apple Oat Crumble Bars
Enjoy these rustic oat crumble bars bursting with the flavors of blackberries, apple, and a hint of fresh sage and lemon. They are vegan, gluten-free, and perfect for a sweet treat!
Ingredients
For the Crumble:
2 cups oat flour gluten-free if required
1 cup rolled oats gluten-free if required
cup coconut oil, melted 便
cup desiccated coconut 便
cup sliced almonds
cup coconut sugar
1 tablespoon lemon zest
1 teaspoon baking powder gluten-free if required 籠
1 teaspoon natural vanilla extract
teaspoon salt 蓼
For the Filling:
2 cups blackberries fresh or frozen
1 apple, grated Granny Smith recommended
2 tablespoons corn flour cornstarch
1 tablespoon sage, very finely sliced
Instructions
1 Preheat the oven to 200C 390F fan bake, and line an 18×27 cm approximately 7×10.5 inches slice tin with baking paper.
2 If using frozen blackberries, measure them into a bowl and set aside to thaw slightly while making the crumble.
3 In a large bowl, mix all crumble ingredients except for the melted coconut oil.
4 Gradually pour the melted coconut oil over the crumble ingredients, mixing well until the mixture is wet and clumps together easily when squeezed. You may not need all of the coconut oil.
5 Measure a heaped cup of the crumble mixture and set aside for the topping.
6 Press the remaining crumble mixture into the slice tin, using the back of a spoon or a drinking glass to get it nice and even.
7 Sprinkle the corn flour over the blackberries and toss together. Then tip the blackberries onto the crumble base and spread them out evenly.
8 Evenly distribute the grated apple and sliced sage over the blackberries.
9 Use the reserved crumble mixture as a topping for the fruit, spreading it out evenly but keeping it in rustic clumps.
Bake for 30 minutes, or until the topping is a deep golden brown.
11 Remove from the oven and allow to cool and set for 1-2 hours in the pan.
12 Use the baking paper to gently lift the uncut bars onto a chopping board, and slice into even portions.
