Cookie Monster Cheesecake

A fun, delicious dessert that combines chocolate chip shortbread crust, creamy cookies and cream cheesecake filling, topped with chocolate ganache and cookies! Perfect for kids and adults alike!

Ingredients

Chocolate Chip Cookie Crust

cup butter melted 杻

tsp salt 蓼

cup light brown sugar packed

1 egg 讀

1 tsp vanilla extract

1 cup all-purpose flour

cup semisweet mini chocolate chips

Cookies and Cream Cheesecake

8 oz cream cheese room temperature 燎

2 tsp cornstarch

1 cup granulated sugar

Pinch of salt 蓼

cup whipping cream 拏

Sky blue gel paste food coloring

1 tsp vanilla extract

3 eggs 讀

15 regular Oreo cookies chopped

Chocolate Ganache

cup semisweet chocolate chips

cup whipped cream 療

Pinch of salt 蓼

For Garnish

Chocolate chip cookies

Blue candy melts for drizzle


Instructions

1. Chocolate Chip Cookie Crust

1 Preheat oven to 350F 175C. Spray an 8-inch springform pan with nonstick spray.

2 In a microwave-safe bowl, combine butter, salt, and brown sugar. Microwave in 30-second intervals, stirring until melted. Let cool for 10-15 minutes.

3 Whisk in the egg and vanilla extract until fully incorporated.

4 Stir in half of the flour, then fold in the remaining flour and chocolate chips.

5 Press the dough into the prepared pan and bake for 15 minutes. Remove from the oven and let cool.

2. Cookies and Cream Cheesecake

6 Reduce oven to 300F 150C.

7 Beat together cream cheese, cornstarch, and sugar until smooth and creamy.

8 Add salt, cream, vanilla, and a few drops of blue food coloring. Mix until smooth.

9 Add eggs one at a time, beating well after each addition.

Fold in chopped Oreo cookies.

11 Pour the cheesecake batter over the cooled cookie crust.

12 Wrap the pan in heavy-duty foil to avoid water seeping in. Place it in a larger pan with an inch or two of hot water.

13 Bake for 1 hour 10 minutes until the center jiggles slightly like Jello.

14 Turn off the heat, crack the oven door, and cool for 30 minutes.

15 Remove the cheesecake from the oven and water bath, then cool to room temperature 4-5 hours. Chill in the fridge overnight.

3. Chocolate Ganache

16 Microwave chocolate chips, whipped cream, and salt in 30-second intervals, stirring after each. Let it cool until spreadable.

4. Assemble and Garnish

17 Spread the ganache over the chilled cheesecake.

18 Pipe swirls of ganache on top using a 1M piping tip.

19 Melt the blue candy melts, drizzle over the cheesecake using a piping bag.

20 Top the ganache swirls with chocolate chip cookies.

21 Store in the fridge until ready to serve.
