Peach Crumble Cheesecake

This Peach Crumble Cheesecake is a delightful summer dessert, featuring a creamy cheesecake filling layered with juicy peaches and a sweet brown sugar streusel. Topped with cinnamon whipped cream, its perfect for impressing guests!

Ingredients

For the Crust:

1 cups graham cracker crumbs about 14 graham crackers

teaspoon salt 蓼

6 tablespoons unsalted butter, melted 杻

cup granulated sugar

For the Peach Filling:

5 cups sliced and peeled peaches about 5-6 peaches

1 teaspoon ground cinnamon

3 tablespoons granulated sugar

For the Cinnamon Streusel:

cup all-purpose flour

cup packed light brown sugar

cup granulated sugar

1 teaspoons ground cinnamon

5 tablespoons unsalted butter, melted 杻

teaspoon salt 蓼

For the Cheesecake Filling:

2 pounds four 8-ounce blocks cream cheese, softened to room temperature 燎

1 cups granulated white sugar

Pinch of salt 蓼

2 teaspoons vanilla extract

1 teaspoon lemon juice optional

4 large eggs room temperature 讀

cup sour cream 籠

cup heavy cream

For the Cinnamon Whipped Cream:

1 cup cold heavy cream

3 tablespoons powdered sugar


1 teaspoon vanilla extract

teaspoon ground cinnamon

Instructions

Make the Graham Cracker Crust

1 Prep the Oven: Preheat the oven to 350F 177C and lightly grease a 9-inch springform pan.

2 Make the Crust: Pulse graham crackers in a food processor until finely ground. In a large bowl, mix the crumbs with salt, melted butter, and granulated sugar.

3 Assemble the Crust: Press the crumb mixture firmly into the bottom and slightly up the sides of the springform pan using the bottom of a measuring cup.

4 Bake the Crust: Place the pan on a baking sheet and bake at 350F 177C for 10 minutes. Remove from the oven and let cool.

Make the Peach Filling

5 Cook the Peaches: In a medium saucepan over medium heat, combine sliced peaches, sugar, and cinnamon. Cook for about 5-7 minutes until softened. Remove from heat and allow to cool.

Make and Bake the Streusel

6 Make the Streusel: In a medium bowl, stir together flour, brown sugar, granulated sugar, cinnamon, melted butter, and salt until a crumbly mixture forms.

7 Bake the Streusel: Spread the streusel mixture onto a baking sheet and bake for 7-10 minutes. Remove from the oven and allow to cool.

Make the Cheesecake Filling

8 Combine Cream Cheese and Sugar: In the bowl of a stand mixer, beat cream cheese and sugar on low speed for 4 minutes.

9 Add Remaining Ingredients: Gradually add salt, vanilla, and lemon juice, mixing after each addition. Add eggs one at a time, beating for one minute after each addition. Finally, add sour cream and heavy cream, beating until fully incorporated.

Bake the Cheesecake

Lower the Oven Temperature: Reduce the oven temperature to 325F 160C.

11 Wrap the Springform Pan: Wrap the outside of the springform pan in 3-4 layers of aluminum foil to prevent water from leaking in.

12 Prepare a Water Bath: Place the foil-wrapped springform pan in a large, high-sided roasting pan. Prepare 2 quarts of boiling water.

13 Assemble the Cheesecake: Pour half of the cheesecake filling on top of the crust. Layer half of the peach filling on top discarding excess juice and sprinkle on half of the streusel. Pour the remaining cheesecake filling over the top.

14 Bake the Cheesecake: Carefully pour hot water into the roasting pan until it reaches halfway up the side of the springform pan. Bake at 325F 160C for 1 hours.

15 Cool in the Oven: Turn off the oven and crack open the door. Let the cheesecake cool in the oven for one hour.

16 Chill the Cheesecake: Cover the top of the cheesecake with a paper towel and then cover with foil. Chill in the refrigerator for a minimum of 4 hours or overnight.

Make the Whipped Cream

17 Whip the Cream: Chill the mixing bowl and beaters for 10 minutes. Using an electric mixer, whip cold heavy cream, powdered sugar, vanilla extract, and cinnamon on low, then increase to medium-high until stiff peaks form about 5 minutes.

Serve the Cheesecake

18 Decorate: Before serving, top with reserved peaches and streusel. Pipe or dollop cinnamon whipped cream around the outside of the cheesecake in a circle.
