No Bake Lemon Raspberry Cheesecake Parfaits

These No Bake Lemon Raspberry Cheesecake Parfaits are quick, easy, and bursting with the perfect blend of tangy lemon and sweet raspberries. Perfect for a refreshing dessert!

Ingredients:

24 Nilla wafer cookies, crushed

16 oz cream cheese, softened 燎

400g lemon-flavored smooth cottage cheese

1/4 cup confectioners sugar

180 ml raspberry pie filling

1 can Gay Lea Real Whipped Cream you wont use the whole can 籠

Optional: Fresh raspberries for garnish

Instructions:

1 Prepare the Crust:

Crush the Nilla wafers into small pieces. You can use a food processor or toss them in a baggie and crush with a rolling pin.

Place half of the crushed wafers in the bottom of each glass. Set the rest aside for the second layer.

2 Make the Cheesecake Filling:

In a bowl, combine the softened cream cheese, lemon-flavored smooth cottage cheese, and confectioners sugar.


Mix on low speed at first, gradually increasing to high speed until smooth and well-combined.

Spoon half the cheesecake filling into each glass or use a piping bag for a cleaner look. Set aside the remaining half for the next layer.

3 Add Raspberry Layer:

Spoon a couple of heaping teaspoons of raspberry pie filling into each glass. Smooth out or gently tap the glasses on the counter to spread evenly.

4 Layer 2:

Add the remaining crushed Nilla wafer cookies over the raspberry filling.

Spoon the remaining cheesecake mixture over the wafer layer.

Add another layer of raspberry pie filling on top of the cheesecake.

5 Top and Chill:

Finish with a generous dollop of whipped cream on top.

Garnish each parfait with a fresh raspberry .

Place the parfaits in the fridge to chill for at least 1 hour or overnight if you prefer.

6 Serve & Enjoy!
