Rocky Road Stuffed Marshmallow Cookies

Indulge in the perfect combination of rich chocolate, gooey marshmallows, and a hint of crunch with these Rocky Road Stuffed Marshmallow Cookies! Theyre soft, chewy, and packed with flavor.

Ingredients:

1 cup all-purpose flour

cup cocoa powder

teaspoon baking powder 療

teaspoon salt 蓼

stick butter room temperature 杻

2 oz dark chocolate bar chopped up and melted

cup dark brown sugar

cup granulated sugar

1 large egg 1 yolk 讀

1 cup dark chocolate chips


12 regular Campfire Marshmallows

Directions:

1 In a medium bowl, combine all the dry ingredients flour, cocoa powder, baking powder, salt.

2 In a separate bowl, beat together butter, melted chocolate, brown sugar, and granulated sugar until smooth. Then, beat in the egg and yolk.

3 Add dry ingredients in thirds, mixing gently between each addition. Be careful not to overmix the batter.

4 Stir in the dark chocolate chips until combined.

5 Form 6 giant cookie balls, and place 2 Campfire marshmallows in each one. Ensure the dough fully covers the marshmallows.

6 Preheat the oven to 350F 175C and line 2 cookie sheets with parchment paper or silicone mats. Place no more than 3 cookies on each sheet.

7 Bake for 15-18 minutes. The edges should be crispy, and the tops soft.

8 Allow the cookies to set before removing from the sheet.
