Chocolate Cake with Fresh Strawberry Filling

This luscious cake combines rich, moist chocolate layers with a tangy-sweet strawberry filling, topped off with a smooth chocolate frosting. Its the perfect dessert for any celebration!

Ingredients:

For the Cake:

2 large eggs 讀

1 3/4 cups all-purpose flour

3/4 cup unsweetened cocoa powder

1 1/2 cups sugar

1 1/2 tsp baking powder

1 1/2 tsp baking soda 蓼

1 tsp salt 蓼

1 cup whole milk 拏

1/2 cup vegetable oil

2 tsp vanilla extract

1 cup boiling water

For the Strawberry Filling:

2 cups fresh strawberries, hulled and sliced

1/4 cup sugar

1 tbsp lemon juice

1/4 cup cornstarch

1 cup water


For the Frosting:

1 cup unsalted butter, softened 杻

4 cups powdered sugar

1/2 cup unsweetened cocoa powder

1/4 cup heavy cream 拏

2 tsp vanilla extract

Instructions:

Cake: 1 Preheat oven to 350F 175C. Grease and flour two 9-inch round cake pans.

2 In a large bowl, beat sugar, eggs, and vanilla until fluffy. Add milk and vegetable oil, mixing until combined.

3 In a separate bowl, whisk flour, cocoa powder, baking powder, baking soda, and salt. Gradually mix dry ingredients into the wet mixture.

4 Stir in boiling water until the batter is smooth and thin.

5 Divide the batter evenly between the pans and bake for 30-35 minutes, until a toothpick comes out clean. Cool completely in pans.

Strawberry Filling:

1 Combine strawberries, sugar, lemon juice, cornstarch, and water in a saucepan over medium heat. Cook until thickened, about 5-10 minutes. Let cool.

Assembling the Cake:

1 Once cakes are cooled, level them if needed. Spread the strawberry filling over the first cake layer, then place the second layer on top.

Frosting:

1 Beat softened butter until creamy. Gradually add powdered sugar and cocoa powder. Mix in heavy cream and vanilla, beating until smooth.

2 Frost the top and sides of the cake. Garnish with extra strawberries if desired.
