Greek Chicken Kabobs
Grilled Greek Chicken Skewers with Zesty Marinade
Ingredients:
1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
1 red bell pepper, cut into chunks
1 yellow bell pepper, cut into chunks
1 red onion, cut into chunks
1/4 cup olive oil
2 tablespoons lemon juice
2 tablespoons red wine vinegar
3 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon dried rosemary
1/2 teaspoon dried basil
Salt and pepper to taste
Wooden or metal skewers
Directions:
In a large mixing bowl, combine the olive oil, lemon juice, red wine vinegar, minced garlic, dried oregano, dried thyme, dried rosemary, dried basil, salt, and pepper. Mix well to create the zesty marinade.
Add the chicken cubes to the marinade and toss until the chicken is evenly coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour or up to 4 hours to allow the flavors to meld.
If using wooden skewers, soak them in water for 30 minutes to prevent them from burning on the grill.
Preheat your grill to medium-high heat.
Thread the marinated chicken, red bell pepper, yellow bell pepper, and red onion onto the skewers in any pattern you like.
Place the assembled skewers on the preheated grill and cook for about 10-15 minutes, turning occasionally, until the chicken is fully cooked and has a nice char on the edges.
Remove the Greek chicken kabobs from the grill and serve them hot with your favorite side dishes or on a bed of fluffy couscous.
