Pulled Pork Nachos with Sriracha Slaw
Ingredients:
1 lb 450g pulled pork
8 oz 225g tortilla chips
2 cups shredded cheddar cheese
1/2 cup sour cream
1/4 cup chopped fresh cilantro
Lime wedges, for garnish
For the Sriracha Slaw:
2 cups coleslaw mix cabbage and carrots
1/4 cup mayonnaise
1 tablespoon sriracha sauce adjust to taste
1 tablespoon lime juice
Salt and pepper to taste
Directions:
Preheat your oven to 375F 190C.
Spread the tortilla chips in a single layer on a large baking sheet.
Sprinkle the shredded cheddar cheese evenly over the chips.
Place the baking sheet in the oven and bake for about 5-7 minutes or until the cheese is melted and bubbly.
While the nachos are baking, prepare the Sriracha Slaw.
In a bowl, combine the coleslaw mix, mayonnaise, sriracha sauce, lime juice, salt, and pepper. Toss until everything is well coated.
Once the nachos are ready, remove them from the oven.
Top the cheesy nachos with pulled pork.
Spoon the Sriracha Slaw over the pulled pork.
Drizzle sour cream over the top and sprinkle with chopped fresh cilantro.
Serve your Pulled Pork Nachos with Sriracha Slaw with lime wedges for an extra burst of flavor.
