Ingredients

cup unsalted butter, softened to room temperature
cup brown sugar, lightly packed
cup white sugar
1 large egg
1 teaspoon vanilla extract
2-3 teaspoons red food coloring liquid or gel

Instructions
1. Prepare Dry Ingredients:
In a large bowl, whisk together the flour, cocoa powder, cornstarch, baking soda, and salt. Set aside.
2. Cream Butter and Sugars:
In a separate large bowl, beat the softened butter, brown sugar, and white sugar together until the mixture is light and fluffy.
3. Add Wet Ingredients:
Beat in the egg, vanilla extract, and red food coloring until well combined.
4. Combine Mixtures:
With the mixer on low speed, gradually add the flour mixture, mixing until just combined. Turn off the mixer and gently stir in the white chocolate chips.
5. Chill the Dough:
Cover the bowl with plastic wrap and refrigerate for 3 hours or overnight to allow the flavors to meld.
6. Preheat the Oven:
When ready to bake, preheat the oven to 350F 175C. Line two cookie sheets with parchment paper or silicone baking mats.
7. Form the Cookies:
Using a cookie scoop, form the dough into balls of about 1 to 1.5 tablespoons in size. Place the dough balls 2 inches apart on the lined cookie sheets. If the dough is too firm to scoop, let it sit at room temperature for 10-20 minutes.
8. Bake the Cookies:
Bake one cookie sheet at a time on the middle rack of the oven for 7-9 minutes, or until the tops look just set.
9. Optional Topping:
If desired, place a few extra white chocolate chips on the tops of each cookie right after removing them from the oven.
10. Cool:
Allow the cookies to cool on the tray for 10 minutes before transferring them to a wire rack to cool completely.
