Crustless Blueberry Pie Recipe

Ingredients

1 cup plus 2 tablespoons granulated sugar, divided
1 cup all-purpose flour
1 teaspoon cinnamon

cup unsalted butter, melted
2 large eggs
1 teaspoon vanilla extract or to taste
to 1 teaspoon almond extract or to taste
2 cups plus 1/4 cup fresh blueberries, divided
Instructions
Preheat the Oven:
Preheat your oven to 350F 175C. Spray a 9-inch round pie dish generously with cooking spray and set aside. A glass pie dish is recommended, as baking times may vary if using metal.
Prepare Dry Ingredients:
In a large bowl, combine 1 cup of sugar, flour, cinnamon, and salt. Whisk until thoroughly combined and set aside.
Melt Butter:
In a medium microwave-safe bowl, melt the butter in the microwave on high power for about 45 seconds. Allow it to cool slightly before adding the eggs to avoid scrambling them.
