This Red Velvet Cheesecake Trifle is a delightful dessert that combines rich red velvet cake with a fluffy cheesecake filling. Perfect for Valentines Day or any special occasion, its an indulgent treat that looks as good as it tastes!

Ingredients

For the Red Velvet Cake:

1 red velvet boxed cake mix, plus ingredients listed on the box

For the Cheesecake Filling:

16 oz 2 blocks cream cheese, softened

cup sour cream

1 teaspoon vanilla extract

2 cups powdered sugar

For the Whipped Cream:

3 cups heavy whipping cream

Instructions

1. Bake the Red Velvet Cake:

Prepare the red velvet cake according to the instructions on the box in a 9 x 13-inch pan. Allow the cake to cool completely before assembling the trifle.

2. Make the Cheesecake Filling:


In a large mixing bowl, use electric beaters or a stand mixer with a paddle attachment to beat the softened cream cheese on medium speed until smooth about 1 minute. Scrape down the bowl halfway through to ensure everything is mixed well.

Add the sour cream and vanilla extract to the cream cheese, then beat again until fully incorporated and smooth about 30 seconds to 1 minute.

Gradually add the powdered sugar in cup increments, mixing on medium speed between each addition until fully incorporated and smooth. Set aside.

3. Whip the Cream:

If using hand beaters, place the heavy whipping cream in a separate large bowl. If using a stand mixer, scrape the cream cheese mixture into another bowl and then place the heavy whipping cream back in the stand mixer.

Beat the heavy whipping cream starting on low speed for 1 minute to avoid splatter, then increase to high speed until stiff peaks form about another 3-4 minutes.

4. Combine the Mixtures:

Gently stir about of the whipped cream into the cream cheese mixture using a large wooden spoon or rubber spatula. Then, fold in another of the whipped cream gently to avoid deflating it. Repeat with the remaining whipped cream.

5. Assemble the Trifle:

For a Large Trifle: Cut the cake into three sections. Break one third of the cake into chunks and place in the bottom of a trifle bowl. Top with of the cream cheese filling. Repeat the layering process two more times for a total of three layers, finishing with the cream cheese layer on top.

For Individual Trifles: Cut the cake into pieces matching the number of trifles you plan to make. Divide each piece into three smaller pieces. Layer the cake and cream cheese filling as described above in each individual glass.

6. Chill and Serve:

Refrigerate the assembled trifles for at least 1-2 hours to allow the flavors to meld together. Serve chilled and enjoy!
