Ingredients:

For the Steak:

1 lb sirloin steak or ribeye, cut into bite-sized cubes

2 tbsp olive oil

4 cloves garlic, minced

2 tbsp unsalted butter

1 tsp fresh thyme optional

Salt and pepper to taste

For the Potatoes:

1 lb baby potatoes, halved

2 tbsp olive oil

2 cloves garlic, minced

1 tsp paprika

1 tsp dried rosemary or thyme


Salt and pepper to taste

Instructions:

For the Potatoes:

Cook the Potatoes: In a large skillet, heat the olive oil over medium heat. Add the halved baby potatoes, cut side down, and season with salt, pepper, paprika, and dried rosemary or thyme. Cook for 10-12 minutes, stirring occasionally, until the potatoes are golden and tender. Add the minced garlic during the last 2 minutes of cooking. Remove from the skillet and set aside.

For the Steak:

Cook the Steak: In the same skillet, heat 2 tbsp olive oil over medium-high heat. Season the steak cubes with salt and pepper. Add the steak to the skillet and cook for 3-4 minutes, turning occasionally to brown on all sides.

Add the Garlic Butter: Lower the heat to medium, and add the minced garlic, butter, and fresh thyme if using to the skillet. Cook for an additional 1-2 minutes, basting the steak with the melted butter and garlic. Remove from heat once the steak reaches your desired doneness.

Serve:

Combine: Add the cooked potatoes back to the skillet with the steak. Toss everything together in the garlic butter until evenly coated.

Garnish and Serve: Serve hot, garnished with fresh parsley if desired. Pair with a side of veggies or a fresh salad for a complete meal.
