Ingredients:
For the Baked Potatoes:
4 large russet potatoes
2 tbsp olive oil
Salt and pepper to taste
For the Steak:
1 lb sirloin steak or your favorite cut, cut into bite-sized pieces
1 tbsp olive oil
1 tsp garlic powder
Salt and pepper to taste
For the Shrimp:
1/2 lb large shrimp, peeled and deveined
1 tbsp butter
2 cloves garlic, minced
1 tsp paprika
1 tsp lemon juice
Salt and pepper to taste
For the Toppings:
1 cup shredded cheddar cheese
1/2 cup sour cream
1/4 cup chopped green onions
1/4 cup crumbled bacon optional
Fresh parsley, chopped for garnish
Instructions:
For the Baked Potatoes:
Preheat Oven: Preheat your oven to 400F 200C. Scrub the potatoes clean, prick them with a fork a few times, and rub with olive oil. Season with salt and pepper.
Bake the Potatoes: Place the potatoes directly on the oven rack and bake for 50-60 minutes, or until tender when pierced with a fork.
For the Steak:
Cook the Steak: While the potatoes are baking, heat 1 tbsp of olive oil in a skillet over medium-high heat. Season the steak pieces with garlic powder, salt, and pepper. Cook the steak for 3-4 minutes per side until browned and cooked to your desired doneness. Set aside.
For the Shrimp:
Sauté the Shrimp: In the same skillet, melt the butter over medium heat. Add the minced garlic and cook for 1 minute until fragrant. Add the shrimp, paprika, lemon juice, salt, and pepper. Cook the shrimp for 2-3 minutes per side, until pink and cooked through. Set aside.
Assemble the Loaded Potatoes:
Slice the Potatoes: Once the potatoes are baked, slice them open and fluff the inside with a fork.
Load Them Up: Layer the shredded cheddar cheese inside the potato, followed by the cooked steak and shrimp. Add a dollop of sour cream, and sprinkle with green onions and crumbled bacon if using. Garnish with fresh parsley.
