Cookie Dough Brownie Cake

Rich, decadent, and indulgent, this three-layer brownie cake is filled with creamy cookie dough frosting and topped with smooth chocolate ganache. Perfect for any celebration!

Ingredients:

Brownie Cake:

1 cups vegetable oil 㮝

3 cups sugar

3 tsp vanilla extract

6 large eggs 讀

1 cups all-purpose flour

1 cup cocoa powder

tsp baking powder 籠

tsp salt 蓼

Cookie Dough Filling:

3 sticks unsalted butter, room temperature 杻

cup light brown sugar, packed

3 cups confectioners sugar

1 cup all-purpose flour

tsp salt 蓼

3 tbsp milk 拏

2 tsp vanilla extract

Ganache Frosting:

4 oz semi-sweet chocolate, finely chopped

cup heavy whipping cream 拏


cup light corn syrup

2 tsp vanilla extract

Extra chocolate chips for garnish

Instructions:

1 Brownies:

Preheat oven to 350F 175C. Line three 8-inch round baking pans with parchment and cooking spray.

In a large bowl, mix sugar and oil. Stir in eggs, one at a time, until well incorporated. Add vanilla.

In a separate bowl, whisk flour, cocoa powder, baking powder, and salt. Gradually add dry ingredients to wet, stirring just until combined.

Divide batter among prepared pans and bake for 20-25 minutes, or until a toothpick comes out with moist crumbs. Cool completely and set aside.

2 Cookie Dough Filling:

Beat butter and brown sugar until light and fluffy. Add confectioners sugar and mix until smooth.

Add flour, salt, milk, and vanilla, and beat until light and fluffy.

3 Ganache Frosting:

Heat heavy cream in the microwave until hot about 45 seconds. Pour over chocolate and let sit for 30 seconds. Stir until smooth.

Add corn syrup and vanilla, stirring until fully combined. Set aside.

4 Assembly:

Place one brownie layer on a serving platter. Spread 1 cup of cookie dough filling over it, then repeat with the second brownie layer.

Place the final brownie layer on top and refrigerate the assembled cake for 10 minutes.

Pour ganache over the top of the cake, using a spatula to spread it gently to the edges. Refrigerate for 20 minutes to set.

Pipe remaining filling decoratively around the top, garnish with chocolate chips, and drizzle with extra ganache.
