Mini Cherry Cheesecakes

These Mini Cherry Cheesecakes are delightful, bite-sized treats that combine a delicious Oreo crust with creamy cheesecake and a topping of classic cherry pie filling. Perfect for parties, holidays, or any special occasion!

Ingredients:

For the Crust:

10 Oreo cookies

2 tbsp melted butter 杻

For the Cheesecake Filling:

8 oz cream cheese, softened 燎

2 tbsp heavy whipping cream 拏

1 egg 讀

1/4 cup sugar

2 tsp vanilla extract

For Topping:

1 cup cherry pie filling

Instructions:

Preheat Oven: Preheat your oven to 325F 163C.

Prepare the Crust:

Place the Oreo cookies in a zip-top bag and crush them into fine crumbs.

In a bowl, combine the crushed Oreos with melted butter until well mixed.


Assemble the Crust:

Scoop about 1 tablespoon of the crumb mixture into each cup of a mini cheesecake pan using a cookie scoop works well for this.

Make the Cheesecake Filling:

In a mixing bowl, beat the softened cream cheese at medium speed until creamy.

Add the heavy whipping cream and beat until combined, scraping down the sides of the bowl as necessary.

Add the egg and mix until well combined. Gradually add the sugar while the mixer is running, then add the vanilla and beat for an additional minute.

Scrape down the sides of the bowl and mix for another 30 seconds.

Fill the Mini Cheesecakes:

Spoon the cheesecake filling into the mini cheesecake pan, filling each cup about 3/4 full.

Bake:

Bake in the preheated oven for 25 minutes or until the centers of the cheesecakes are set.

Once baked, remove from the oven and let them cool.

Add Topping:

Top each mini cheesecake with cherry pie filling.

Chill:

Refrigerate for at least 1 hour before serving.
