Black Forest Cheesecake with Rich Chocolate and Berry Topping
A luxurious blend of classic cheesecake, dark chocolate, and a vibrant berry topping, this Black Forest Cheesecake is both decadent and refreshinga perfect dessert for any celebration!
Ingredients
For the Black Forest Topping:
410 g black cherry fruit filling tinned
150 g blackberries
125 g blueberries optional 𢡄
Juice of 1 lime
2 tablespoons Kirsch optional
For the Cheesecake:
45 g unsalted butter 杻
150 g Bourbon biscuits crushed
300 g soft cream cheese 燎
60 g caster sugar
150 ml double cream or heavy cream 拏
60 g dark chocolate
Instructions
1 Making the Black Forest Topping:
In a saucepan, combine the tinned cherries, blackberries, and blueberries with lime juice.
Cook on low heat, stirring regularly until the fruit softens and the mixture thickens slightly.
Remove from heat, let cool, and optional stir in Kirsch for added flavor.
2 Preparing the Cheesecake Base:
Melt the butter and mix with the crushed Bourbon biscuits until fully combined.
Press the mixture into the base of a springform tin, forming an even layer. Chill in the fridge for 30 minutes to set.
3 Creating the Cream Cheese Filling:
In a mixing bowl, whisk the cream cheese and caster sugar until smooth.
Separately, whip the double cream until soft peaks form, then gently fold into the cream cheese mixture.
Melt the dark chocolate, let it cool slightly, then fold into the cream cheese mixture.
4 Assembling the Cheesecake:
Pour the cream cheese mixture over the chilled biscuit base, spreading it evenly.
Spoon the cooled Black Forest topping over the cheesecake.
Chill in the fridge for at least 4 hours or, ideally, overnight to fully set.
