Colorful Christmas Cheesecake
A creamy, festive cheesecake with red, white, and green stripes to bring joy and color to your holiday dessert table!
Ingredients
For the Oreo Crust:
24 Oreo cookies keep filling
1/4 cup melted unsalted butter 杻
For the Cream Cheese Filling:
32 oz cream cheese, softened 燎
1 1/4 cups sugar
2 teaspoons vanilla or peppermint extract
4 eggs, slightly beaten 讀
1 cup sour cream 籠
Red and green food coloring
Instructions
1 Prepare the Pan: Preheat oven to 325F 163C. Grease a deep 9-inch springform pan with non-stick spray, line with parchment paper, and wrap in two layers of aluminum foil to prevent leaks.
2 Make the Crust: Pulse Oreos in a food processor to fine crumbs, mix with melted butter until combined. Press the mixture into the bottom of the pan and place in the freezer to set.
3 Make the Filling: In a large bowl, mix cream cheese, sugar, and extract until just combined. Add eggs and mix on low speed until smooth. Fold in sour cream.
4 Divide and Color the Batter: Reserve half the batter in white. Divide the remaining batter into two bowls and color one red and one green.
5 Create the Striped Effect: Starting with a small amount of white batter in the center of the crust, add alternating spoonfuls of green, white, red, and white batter to form concentric circles. Gently shake the pan as needed to help the layers spread.
6 Bake in a Water Bath: Place the springform pan in a large roasting pan. Fill the roasting pan halfway with hot water. Bake for 90-110 minutes until the edges are set and the center is slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour.
7 Cool and Chill: Remove the cheesecake from the water bath and cool at room temperature, then refrigerate for 4 hours or overnight.
8 Serve: Carefully remove the foil and pan, transfer cheesecake to a serving plate, and enjoy this colorful holiday treat!
