Sugared Cranberry Cheesecake Bites

Beautifully topped with sugared cranberries and fresh whipped cream, these cheesecake bites are perfect for festive gatherings!

Ingredients

Graham Cracker Crust

cup graham cracker crumbs

1 tbsp sugar

cup unsalted butter, melted

Cheesecake Filling

16 oz two 8 oz packages cream cheese, softened

cup sugar

cup sour cream

tsp pure vanilla extract

tsp kosher salt

2 large eggs

Sugared Cranberries

2 cups fresh cranberries

1 cup sugar

1 cup water

cup sugar for rolling

Fresh Whipped Cream

1 cup heavy whipping cream

cup powdered sugar


1 tsp pure vanilla extract

Instructions

1. Make the Graham Cracker Crust:

Preheat oven to 325F 165C and line a cupcake pan with cupcake liners.

In a medium bowl, mix graham cracker crumbs, sugar, and melted butter until combined.

Scoop about 1 tablespoon of the mixture into each cupcake liner and press down firmly to form a crust. Set aside.

2. Prepare the Cheesecake Filling:

Using a hand mixer, beat softened cream cheese and sugar together until smooth.

Mix in sour cream, vanilla, and salt until fully combined.

Add the eggs one at a time, mixing just until combined.

Scoop about 2 tablespoons of the filling onto each crust.

Bake for 17-22 minutes or until edges are set and slightly golden. Cool, then refrigerate for a few hours.

3. Make Sugared Cranberries:

In a small pot, combine 1 cup sugar and 1 cup water. Simmer on low heat, stirring until sugar dissolves.

Add cranberries to the syrup, stirring gently to coat them, then remove with a slotted spoon and place on a baking sheet. Let sit for 15 minutes.

Roll cranberries in cup sugar until fully coated. Set aside.

4. Fresh Whipped Cream:

In a medium bowl, beat heavy cream, powdered sugar, and vanilla until stiff peaks form.

Pipe dollops of whipped cream onto each cheesecake bite.

5. Assemble:

Place a few sugared cranberries on top of each cheesecake bite.
