Samoa Cheesecake
Ingredients
Chocolate Crust Layer:
2 cups chocolate sandwich cookie crumbs from 26 Oreo cookies
6 tablespoons unsalted butter, melted 杻
teaspoon salt 蓼
Cheesecake Layer:
32 ounces cream cheese, softened 燎
1 cups granulated sugar
1 tablespoon vanilla extract
4 large eggs 讀
cup sour cream
3 tablespoons heavy cream
46 cups boiling water for the water bath
Samoa Cookie Topping:
2 cups sweetened shredded coconut 便
1 cup salted caramel sauce
Garnish:
Chocolate dessert sauce
Caramel dessert sauce
Whipped topping
Samoa or Coconut Dream Cookies
Instructions
Chocolate Crust Layer:
1 Preheat oven to 350F. Spray a 9-inch springform pan with baking spray, line with parchment, and wrap in two layers of foil.
2 Mix cookie crumbs, melted butter, and salt until combined. Press into the pan and bake for 10 minutes. Cool to room temperature. Lower oven temperature to 325F.
Cheesecake Layer:
3 Beat cream cheese and sugar until smooth. Add vanilla and eggs one at a time, mixing until fully combined. Scrape the bowl as needed.
4 Mix in sour cream and heavy cream until batter is smooth.
5 Pour batter into the pan and smooth the top. Place the pan into a roasting pan and fill with boiling water to 1 inch up the sides.
6 Bake for 1 hour 40 minutes until the top is golden and the center is just set. Crack oven door and let cool for 1 hour.
7 Remove from oven, discard foil, and refrigerate the cheesecake for at least 8 hours or overnight.
Samoa Cookie Topping:
8 Toast shredded coconut in a dry skillet over medium heat for 46 minutes until lightly golden and fragrant. Cool slightly.
9 Mix toasted coconut with caramel sauce until thick. Spread evenly over the chilled cheesecake.
Garnish:
Drizzle with chocolate and caramel sauces. Top with whipped topping and cookies for decoration.
