Would You Eat Spinach, Mushroom, and Ricotta Stuffed Zucchini Boats? 勒燎
Ingredients:
– 1 tablespoon extra virgin olive oil
– 1 teaspoon minced garlic
– 2 cups fresh spinach or 1 cup thawed frozen spinach
– 1 cup sliced mushrooms
– 2 medium zucchini
– 1 cup ricotta cheese
– 1 cup shredded mozzarella cheese
– 1 tablespoon fresh chopped basil
– 1 teaspoon kosher salt
– Pinch of black pepper
Instructions:
1. Preheat the oven to 375F 190C and light grease a baking sheet or line it with parchment paper.
2. Prepare the zucchini by slicing them in half lengthwise. Scoop out the seeds and a bit of flesh to create a boat shape, leaving a half-inch border. Place the zucchini cut side up on the baking sheet, drizzle with olive oil, and season with salt and pepper. Set aside.
3. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant. Stir in sliced mushrooms and cook for 3-4 minutes until softened. Then add spinach ensuring frozen spinach is thawed and well-drained and cook for an additional 2-3 minutes until wilted. Remove from heat and stir in fresh basil. Let cool slightly.
4. In a mixing bowl, combine the spinach and mushroom mixture with ricotta cheese. Stir until well combined.
5. Generously fill each zucchini half with the ricotta, spinach, and mushroom mixture. Top with shredded mozzarella cheese.
6. Bake the stuffed zucchini boats on the prepared baking sheet in the preheated oven for 20-25 minutes until the cheese is melted and golden, and the zucchini is tender.
7. Once done, allow the boats to cool slightly. Optionally, garnish with additional fresh basil or a drizzle of olive oil before serving.
These irresistible stuffed zucchini boats are an excellent way to enjoy a hearty, veggie-packed meal. Whether as a main dish or a side, they promise rich, savory flavors!
