Ingredients:
– 1 cup caster sugar
– 1 tsp white vinegar
– 4 egg whites
– 1 tsp vanilla extract
– 2 cups heavy whipping cream
– 1 cup fresh raspberries
– 1 cup fresh blueberries
– 1 cup fresh strawberries, halved
– 1 cup fresh kiwi slices optional
– 1 cup powdered sugar
– 1/2 cup crushed pistachios for garnish
– 1/2 cup pomegranate seeds optional for garnish
– 1/2 cup lemon curd optional
– Fresh mint leaves for garnish
– 1 tsp cornstarch
Instructions:
Step 1: Make the Pavlova
Preheat your oven to 300F 150C and line a baking tray with parchment paper. Ensure your bowl and beaters are completely clean and dry. Beat the egg whites on medium speed until soft peaks form. Gradually add sugar one tablespoon at a time, allowing it to dissolve completely for about 10 minutes. The mixture should be glossy and hold stiff peaks. Gently fold in white vinegar, cornstarch, and vanilla extract.
Spoon meringue onto the baking tray, shaping it into one or two large rounds. Make a slight indentation in the center to hold fruit and cream. Bake for 1 hour without opening the oven door. Turn off the oven and let it cool inside for that perfect marshmallow-like center.
Step 2: Prepare the Whipped Cream
While the pavlova is cooling, pour heavy whipping cream into a chilled mixing bowl. Add powdered sugar and vanilla extract, then beat on medium-high speed until soft peaks form. Dont overbeat; you want it light and fluffy. Cover and refrigerate until ready to assemble your trifle.
Step 3: Assemble the Trifle
Once the pavlova is cool, carefully break it into bite-sized pieces. In a large trifle bowl or glass dish, layer pavlova pieces at the bottom. Add a generous layer of whipped cream on top. Next, layer in the mixed fruits: strawberries, raspberries, blueberries, and kiwi. Spoon small dollops of lemon curd for added flavor between layers.
Repeat the layering process until the bowl is full, finishing with a final layer of whipped cream.
Step 4: Garnish and Serve
Top the trifle with pomegranate seeds for color, crushed pistachios for crunch, and fresh mint leaves for a festive touch. Cover with plastic wrap and refrigerate for at least one hour, allowing the flavors to meld. This also helps the pavlova absorb the whipped cream and fruit juices for that delightful texture.
