Spicy Shrimp Linguine with Lemon Zest

Ingredients
For the Spicy Shrimp:
1 lb 450 g large shrimp, peeled and deveined
2 tablespoons olive oil
3 cloves garlic, minced
1 teaspoon red pepper flakes adjust to taste
1 teaspoon smoked paprika
1/2 teaspoon ground cayenne pepper optional, for extra heat
Salt and freshly ground black pepper, to taste
1 tablespoon fresh lemon juice
For the Linguine:
12 oz 340 g linguine
Water for boiling
Salt
For the Sauce:
2 tablespoons butter
1/2 cup white wine or chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
1 tablespoon fresh lemon zest
1 tablespoon fresh lemon juice
Salt and freshly ground black pepper, to taste
2 tablespoons fresh parsley, chopped for garnish
Instructions
Cook the Linguine:
Bring a large pot of salted water to a boil. Add the linguine and cook according to package instructions until al dente. Drain and set aside.
Prepare the Spicy Shrimp:
Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
Add the minced garlic and cook for 1 minute until fragrant.
Add the red pepper flakes, smoked paprika, and cayenne pepper if using. Stir to combine.
Add the shrimp to the skillet and cook for 2-3 minutes per side, or until the shrimp are pink and opaque.
Stir in the fresh lemon juice, season with salt and pepper, and remove from heat. Set the shrimp aside.
Make the Sauce:
In the same skillet used for the shrimp, melt 2 tablespoons of butter over medium heat.
Pour in the white wine or chicken broth and bring to a simmer. Cook for 2-3 minutes to reduce slightly.
Stir in the heavy cream and continue to simmer for 4-5 minutes until the sauce thickens.
Whisk in the grated Parmesan cheese until the sauce is smooth.
Add the fresh lemon zest and lemon juice, and season with salt and pepper to taste.
Combine and Serve:
Add the cooked linguine to the sauce and toss to coat.
Gently fold in the cooked spicy shrimp.
Garnish with chopped fresh parsley.
Tip: For an extra burst of flavor, you can add a bit more lemon zest or a sprinkle of additional red pepper flakes before serving.
