Would You Eat… Red Velvet Oreo Cake Roll Explosion?
Ingredients:
– 2 tablespoons red food coloring
– 1 cup sugar
– 1 1/2 cups all-purpose flour
– 1 teaspoon vanilla extract
– 1/2 cup vegetable oil
– 1 cup buttermilk
– 4 oz cream cheese, softened
– 8 oz cream cheese, softened
– 1/2 cup cocoa powder
– 1 teaspoon baking powder
– 1/4 cup powdered sugar
– 1/2 teaspoon baking soda
– 1 teaspoon white vinegar
– 1 cup crushed Oreo cookies
– 1/2 teaspoon salt
– 1/2 cup butter, softened
– 2 cups powdered sugar
Instructions:
1. Preheat your oven to 350F 175C. Line a 15×10-inch jelly roll pan with parchment paper and lightly grease it for easy removal.
2. In a large mixing bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
3. In a separate bowl, combine buttermilk, red food coloring, eggs, vegetable oil, vanilla extract, and white vinegar. Gradually mix these wet ingredients into the dry ingredients until you achieve a smooth batter.
4. Pour the batter into your prepared pan, spreading it evenly. Bake for 12-15 minutes, or until a toothpick inserted in the center comes out clean.
5. Once the cake is baked, while its still warm, carefully roll it up with the parchment paper starting from one of the shorter ends. Place it seam-side down and allow it to cool completely on a wire rack.
6. For the Oreo filling, mix together the crushed Oreo cookies, softened cream cheese, and powdered sugar until smooth and creamy.
7. Unroll the cooled cake gently and spread the Oreo filling evenly over the surface. Roll the cake back up without the parchment paper this time and transfer it to a serving plate.
8. To make the cream cheese frosting, beat together the additional softened cream cheese and butter until creamy. Gradually add the powdered sugar and vanilla extract, mixing until smooth and fluffy.
9. Frost the outside of the rolled cake with the cream cheese frosting. You can sprinkle additional crushed Oreos on top for a decorative touch!
