Would You Eat … Pistachio Baklava Cheesecake?

Ingredients:

– 2 cups pistachios, finely chopped

– 2 large eggs

– 1/2 cup honey

– 1 teaspoon vanilla extract for cheesecake

– 1/2 cup sugar for cheesecake

– 1/4 teaspoon ground cloves

– 1 cup unsalted butter, melted

– 1 package phyllo dough, thawed

– 1 teaspoon ground cinnamon

– 3 tablespoons water

– 2 8 oz packages cream cheese, softened

– 1 teaspoon vanilla extract for syrup

– 1/4 cup sugar for pistachio mixture

Instructions:

1. Preheat your oven to 350F 175C. Get those good vibes going!

2. In a bowl, mix together the finely chopped pistachios, 1/4 cup sugar, ground cinnamon, and ground cloves. Set this delicious mixture aside.


3. Grab your 9-inch springform pan and brush it with melted butter to get things started right.

4. Layer 10 sheets of phyllo dough in the pan, brushing each sheet lightly with the melted butter.

5. Spread half of the pistachio mixture over the phyllo dough layer.

6. Continue the layering process with another 10 sheets of phyllo dough, brushing each with more butter.

7. Add the remaining pistachio mixture on top, and finish with another layer of 10 sheets of phyllo dough, buttering each once again.

8. Trim any excess phyllo dough hanging over the sides of the pan, and brush the top layer with butter for that golden finish.

9. Bake for 25-30 minutes, or until golden brown and delicious. Once done, remove from the oven and let cool.

10. In a saucepan, combine the honey, water, and 1 teaspoon of vanilla extract. Bring this mixture to a boil, then reduce the heat and let it simmer for 5 minutes. Pour this luscious syrup over the cooled baklava.

11. In a large bowl, beat the softened cream cheese with 1/2 cup sugar until smooth and creamy.

12. Add the eggs one by one, mixing well after each addition, followed by 1 teaspoon vanilla extract.

13. Pour the cheesecake batter over the cooled baklava layer in the springform pan.

14. Bake again for 35-40 minutes or until the center of the cheesecake is set.

15. Allow the cheesecake to cool completely before carefully removing it from the pan.

16. For the best flavor, refrigerate for at least 4 hours before serving.
