Would You Eat Strawberry Seismic Cake?

Ingredients:

– 1 cup strawberry puree

– 4 large eggs

– 2 1/2 cups all-purpose flour

– 1 cup milk

– 1 tablespoon vanilla extract

– 1/2 teaspoon salt

– 1/4 cup granulated sugar

– 1 cup unsalted butter, softened

– 2 teaspoons baking powder

– 1 1/2 cups granulated sugar for the cake

– 1 cup unsalted butter, softened for the frosting

– 4 cups powdered sugar

– 1/2 cup strawberry puree for the frosting

– 2 tablespoons heavy cream

– 1 teaspoon vanilla extract for the frosting

– 1 cup fresh strawberries, chopped for the sauce


– 1 tablespoon lemon juice for the sauce

– Fresh strawberries for decoration

– Whipped cream for decoration

Instructions:

1. Preheat your oven to 350F 175C. Grease and flour two 9-inch round cake pans.

2. In a medium bowl, whisk together the flour, baking powder, and salt. Set this mixture aside for later.

3. In a large bowl, cream the softened butter with granulated sugar until the mixture is light and fluffy.

4. Add eggs one at a time, beating well after each addition. Then mix in the vanilla extract and strawberry puree until fully combined.

5. Gradually mix in the flour mixture and milk, alternating between the two, starting and finishing with the flour mixture. Stir until just combineddo not overmix!

6. Split the batter evenly between the two prepared pans and smooth the tops. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool completely on wire racks.

7. For the frosting, beat the butter until its smooth. Slowly incorporate the powdered sugar, strawberry puree, heavy cream, and vanilla extract until the mixture is fluffy and creamy.

8. To make the strawberry sauce, combine the chopped strawberries, granulated sugar, and lemon juice in a small saucepan. Cook over medium heat, stirring occasionally, until the strawberries break down and the sauce thickens. Remove from heat and let cool.

9. Once the cakes have cooled, frost and stack them using the strawberry frosting in between the layers and on the outside. Drizzle with the cooled strawberry sauce and garnish with fresh strawberries and whipped cream for a delightful finish!
