Ingredients:
– 2 cups 8 oz/225 g extra sharp cheddar cheese, finely grated
– 1 cup 4 oz/115 g butter, softened
– 1 cup about 120 g all-purpose flour
– 1/2 cup 60 g finely chopped pecans
– 1/2 teaspoon salt
– 1/4 teaspoon cayenne pepper optional for a kick
Instructions:
1. Preheat your oven to 350F 175C.
2. In a bowl, beat the softened butter until creamy. Add the finely grated cheddar cheese and mix until well combined.
3. In a separate bowl, whisk together the all-purpose flour, salt, and cayenne pepper. Gradually add this dry mix to the butter-cheese mixture, stirring until it forms a soft dough.
4. Fold in the finely chopped pecans until evenly distributed.
5. Roll the dough into small balls about the size of a tablespoon. Place them on a baking sheet lined with parchment paper, spacing them a couple of inches apart.
6. Gently flatten each ball with the back of a fork or your fingers to form a cookie shape.
7. Bake in the preheated oven for 15-20 minutes, or until the edges are lightly golden.
8. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
