Would You Eat Butternut Squash and Spinach Lasagna?

Ingredients:

– 1 cup ricotta cheese

– 1/4 teaspoon salt

– 8 oz spinach, 1 cup cooked spinach

– 1/4 teaspoon nutmeg

– 10 oz lasagna noodles, cooked

– 1/2 cup milk or more, if needed

– 1 1/2 cups mozzarella cheese or more

– 1/4 teaspoon Italian seasoning

– 1/4 teaspoon paprika

– 2 cups butternut squash puree about half of squash

– 1/4 teaspoon salt plus 1/8 teaspoon more

– 1/2 cup Parmesan cheese for topping

– Pepper to taste

– 1 cup ricotta cheese


– 2 garlic cloves, minced

– 1/4 teaspoon basil

Instructions:

1. Preheat your oven to 375 degrees F.

2. In a food processor, combine the butternut squash puree, ricotta cheese, milk, 1/4 teaspoon salt, and nutmeg. Blend until creamy, adding more milk if necessary. Taste and adjust the salt.

3. For the spinach filling, mix the cooked spinach with 1 cup of ricotta, mozzarella, minced garlic, remaining salt, and pepper. Taste and adjust seasoning.

4. Cook the lasagna noodles as per package instructions in a large pot of boiling water. Rinse in cold water and drain. Trim the noodles if needed to fit your baking dish.

5. Lightly grease your baking dish with olive oil spray. Spread 1/3 of the butternut squash mixture at the bottom. Sprinkle with mozzarella, layer the lasagna noodles without overlapping, and add half of the spinach filling. Top with more mozzarella.

6. Add another layer of noodles, then spread the remaining butternut squash filling and top with mozzarella.

7. Spread the remaining spinach filling over the noodles and top with mozzarella. Finish with a final layer of noodles.

8. Spread the last of the butternut squash mixture on top. Sprinkle with grated Parmesan, remaining mozzarella, Italian seasoning, paprika, and basil.

9. Cover with foil and bake for 30 minutes. Remove the foil and bake for another 10 minutes until bubbly and golden.
