Bruschetta Chicken Pasta
This vibrant dish combines the fresh flavors of bruschetta with tender chicken and pasta for a quick, flavorful dinner thats sure to impress!
Ingredients:
For the pasta:
12 oz spaghetti or your favorite pasta
2 chicken breasts, grilled or pan-seared
2 tbsp olive oil
2 cloves garlic, minced
1/4 cup Parmesan cheese, grated
Salt and pepper to taste
For the bruschetta topping:
4 medium tomatoes, diced
1/4 cup fresh basil, chopped
2 tbsp olive oil
1 tbsp balsamic vinegar
1/2 tsp salt
1/4 tsp black pepper
Directions:
1 Cook the pasta: Boil pasta in salted water according to package directions. Drain and set aside, reserving 1/2 cup of pasta water.
2 Prepare the bruschetta topping: In a bowl, mix diced tomatoes, basil, olive oil, balsamic vinegar, salt, and pepper. Set aside to let the flavors meld.
3 Cook the chicken: Season chicken breasts with salt and pepper. Grill or pan-sear in olive oil until cooked through, about 5-6 minutes per side. Slice into strips.
4 Assemble the pasta: In the same pan, sauté garlic in olive oil until fragrant. Toss the cooked pasta in the pan, adding a splash of reserved pasta water and Parmesan cheese for a light sauce.
5 Top and serve: Plate the pasta, top with sliced chicken, and spoon the bruschetta mixture generously over the top. Garnish with extra basil or Parmesan if desired.
