Ingredients:
For the red velvet cake:
2 1/2 cups all-purpose flour
1 1/2 cups sugar
1 tsp baking soda
1 tsp cocoa powder
1 tsp salt
1 cup buttermilk
1 cup vegetable oil
2 large eggs
1 tsp vanilla extract
2 tbsp red food coloring
1 tsp white vinegar
For the frosting:
500g cream cheese, softened
1 cup unsalted butter, softened
4 cups powdered sugar
1 tsp vanilla extract
For the strawberry glaze:
1 cup fresh strawberries, blended
1/4 cup sugar
1 tsp cornstarch mixed with 2 tbsp water

Fresh strawberries

Steps:
1 Prepare the red velvet cake:
Preheat your oven to 175C 350F. Grease and line two 9-inch round cake pans. In a large bowl, sift together the flour, sugar, baking soda, cocoa powder, and salt. In another bowl, whisk buttermilk, oil, eggs, vanilla, food coloring, and vinegar. Combine the wet and dry ingredients until smooth. Divide the batter evenly between the pans and bake for 30-35 minutes. Let cool completely.
2 Make the frosting:
In a large bowl, beat the cream cheese and butter until fluffy. Gradually add powdered sugar and vanilla extract, beating until smooth and creamy.
3 Prepare the strawberry glaze:
In a saucepan, heat the blended strawberries and sugar over medium heat. Add the cornstarch mixture and stir until thickened. Let it cool before use.
4 Assemble the cake:
Place one layer of red velvet cake on a serving plate. Spread a generous layer of cream cheese frosting. Repeat with the second layer. Cover the entire cake with frosting.
5 Decorate:
Pour the cooled strawberry glaze over the top, letting it drip down the sides. Pipe whipped cream around the edges and top with fresh strawberries.
