Blueberry Chocolate Drip Cheesecake
Ingredients:
For the Base:
200g chocolate biscuits crushed
100g unsalted butter melted 杻
For the Cheesecake Layers:
500g cream cheese room temperature 燎
200g granulated sugar
200ml heavy cream
2 teaspoons vanilla extract
3 eggs 讀
100g fresh blueberries blended into a puree
For the Chocolate Drip:
150g dark chocolate
100ml heavy cream
For the Garnish:
Fresh blueberries

Instructions:
1 Prepare the Base:
1. Combine crushed biscuits with melted butter until the mixture resembles wet sand.
2. Press the mixture firmly into the bottom of a springform pan.
3. Refrigerate for 30 minutes to set.
2 Make the Cheesecake Batter:
1. Preheat the oven to 160C 320F.
2. Beat the cream cheese and sugar until smooth.
3. Add heavy cream, vanilla extract, and eggs one at a time, mixing well after each addition.
4. Divide the batter into two bowls. Mix the blueberry puree into one bowl to create the purple layer.
3 Assemble the Layers:
1. Pour the blueberry layer over the chilled biscuit base.
2. Carefully pour the plain cheesecake layer on top.
3. Place the pan in a water bath to prevent cracking and bake for 50-60 minutes.
4. Turn off the oven, slightly open the door, and let the cheesecake cool inside for 1 hour.
4 Add the Chocolate Drip:
1. Heat the heavy cream and pour it over the dark chocolate. Let sit for 2 minutes, then stir until smooth.
2. Pour the chocolate ganache over the cooled cheesecake, letting it drip down the sides.
5 Garnish and Serve:
1. Decorate the top with fresh blueberries.
2. Chill the cheesecake for at least 4 hours before serving.
