Christmas Chocolate Rice Krispie Balls:
Ingredients:
4 cups Rice Krispies cereal
1 cup semi-sweet chocolate chips
1 cup white chocolate chips
1/2 cup peanut butter or almond butter if preferred
1/2 cup mini marshmallows
1/4 cup unsalted butter
1/4 cup powdered sugar
1/2 tsp vanilla extract
Sprinkles or holiday-themed decorations optional
Instructions:
Prepare the Rice Krispie Base:
In a large bowl, combine the Rice Krispies cereal and mini marshmallows. Set aside.
Make the Chocolate Mixture:
In a medium saucepan, melt the butter and peanut butter over medium heat, stirring frequently.
Once melted, add the semi-sweet chocolate chips and stir until smooth.
Remove the saucepan from heat and stir in the vanilla extract.
Combine the Mixtures:
Pour the chocolate mixture over the Rice Krispies and marshmallows, then stir to combine. The mixture will be sticky, but make sure the cereal is well-coated.
Shape the Balls:
Once the mixture is cool enough to handle, lightly grease your hands with butter or cooking spray.
Roll the mixture into small balls, about 1-inch in diameter. Place them on a lined baking sheet.
Coat in White Chocolate:
Melt the white chocolate chips in a microwave-safe bowl, heating in 20-second intervals, stirring in between until smooth.
Dip each Rice Krispie ball into the white chocolate, then return to the baking sheet.
Decorate:
While the white chocolate is still soft, sprinkle with festive decorations like sprinkles, colored sugar, or edible glitter.
Set and Enjoy:
Let the balls cool at room temperature or refrigerate for about 30 minutes until the white chocolate has set.
