Glazed Fruitcake Shortbread Cookies
Ingredients:
– 2 cups all-purpose flour
– 1 cup glazed fruits and glazed cherries, mixed
– 1 cup butter
– 3/4 cup powdered sugar for cookies
– 3/4 cup powdered sugar for glaze
– 1/2 teaspoon vanilla extract
– 2 tablespoons rum or milk
Instructions:
1. In a stand mixer or a large bowl, combine the butter, powdered sugar, and vanilla extract. Beat until the mixture is light and fluffy.
2. Slowly mix in the all-purpose flour until just combined. Be careful not to overmix to keep those cookies tender.
3. Gently fold in the glazed fruits and cherries, using clean hands if necessary to ensure even distribution without overworking the dough.
4. Split the dough into two portions and form each into a square about 7 inches in size. Dont stress about making them perfect; the plastic wrap can aid you in shaping them.
5. Wrap each dough square in plastic wrap and chill them in the refrigerator for 25 minutes.
6. Preheat your oven to 325F 163C and line two baking sheets with parchment paper.
7. Once chilled, slice the dough into strips 1 3/4 inches wide, then cut into 2-inch pieces. A pizza cutter or sharp knife will make this easier.
8. Arrange the cookie pieces on the prepared baking sheets and bake for 23 to 25 minutes. Allow them to cool on the sheets for a few minutes before moving to wire racks.
9. In a separate bowl, whisk together the powdered sugar with either rum or milk to achieve a smooth glaze. Adjust the consistency as needed with more liquid or sugar.
10. Brush the glaze over the cooled cookies, letting it set quickly. Youll be able to stack them in about an hour!
