Lemon Meltaways

Ingredients
For the Cookies:
1 cup 226 g unsalted butter, softened
1/3 cup 40 g powdered sugar
1 1/2 cups 190 g all-purpose flour
1/4 cup 30 g cornstarch
1 tbsp lemon zest
1 tbsp freshly squeezed lemon juice
1/4 tsp salt
For the Lemon Coating:
1 cup 120 g powdered sugar
1 tsp lemon zest
Instructions
Prepare the Dough:
In a large bowl, cream butter and powdered sugar together until light and fluffy.
Add lemon zest and juice, mixing until well combined.
In a separate bowl, whisk together flour, cornstarch, and salt. Gradually add to the butter mixture, mixing until a soft dough forms.
Chill the Dough:
Divide dough in half and roll each portion into a log about 1 inch in diameter.
Wrap in plastic wrap and refrigerate for at least 1 hour, or until firm.
Slice and Bake:
Preheat oven to 350F 175C. Line a baking sheet with parchment paper.
Slice dough into 1/4-inch thick rounds and place on the prepared baking sheet.
Bake for 1012 minutes, or until edges are lightly golden.
Prepare the Coating:
Combine powdered sugar and lemon zest in a shallow bowl.
Coat the Cookies:
Allow cookies to cool slightly before tossing them gently in the lemon-sugar mixture.
Place coated cookies on a wire rack to cool completely.
Tips for Success:
For extra lemony flavor, add a drop of lemon extract to the dough.
Store cookies in an airtight container for up to a week.
