Strawberry Chocolate Layer Cake

Ingredients:

Chocolate Cake Layer:

1 cup 120g all-purpose flour

1/3 cup 30g cocoa powder

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

1/2 cup 100g sugar

1/2 cup 120ml buttermilk

1/4 cup 60ml vegetable oil

1 large egg

1 tsp vanilla extract

Strawberry Cream Layer:

1 cup 240ml heavy cream, chilled

1/4 cup 50g sugar

1/2 cup 100g strawberry puree

Vanilla Cream Layer:

1 cup 240ml heavy cream, chilled

1/4 cup 50g sugar

1 tsp vanilla extract

Chocolate Ganache:

1/2 cup 120ml heavy cream

3.5 oz 100g dark chocolate, chopped

Toppings:


Fresh strawberries

Chocolate chunks or shavings

Instructions:

1 Make the Chocolate Cake Layer:

Preheat the oven to 350F 175C and grease an 8×8-inch baking pan.

In a bowl, sift together flour, cocoa powder, baking powder, baking soda, and salt.

In another bowl, whisk sugar, buttermilk, oil, egg, and vanilla extract. Gradually mix in the dry ingredients until combined.

Pour into the pan and bake for 25-30 minutes or until a toothpick inserted comes out clean. Let it cool completely.

2 Prepare the Strawberry Cream:

Whip the heavy cream and sugar until soft peaks form. Fold in the strawberry puree and chill.

3 Prepare the Vanilla Cream:

Whip the heavy cream, sugar, and vanilla extract until soft peaks form. Chill.

4 Assemble the Cake:

Cut the chocolate cake in half horizontally.

Place one layer of cake as the base. Spread the strawberry cream evenly on top.

Add the second cake layer and spread the vanilla cream evenly.

5 Make the Chocolate Ganache:

Heat the heavy cream until steaming but not boiling. Pour over the chopped chocolate and let it sit for a minute. Stir until smooth. Let it cool slightly before pouring over the cake.

6 Decorate:

Garnish with fresh strawberries and chocolate chunks or shavings.

7 Chill and Serve:

Chill the cake for at least 2 hours before slicing.
