Ingredients

Instructions


1 Prepare the cookie dough:

Preheat your oven to 350F 175C. Line a baking sheet with parchment paper. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the egg, lemon juice, lemon zest, and vanilla extract until well combined.

2 Combine dry ingredients:

In another bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the crushed freeze-dried strawberries.

3 Form the cookies:

Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet about 2 inches apart. Gently press each ball down with the back of a spoon or your fingers to flatten slightly.
