3 cups rolled oats

For the Marshmallow Cream Filling:

1 cup unsalted butter, softened

2 cups powdered sugar

1 jar 7 ounces marshmallow creme

1 teaspoon vanilla extract

Directions:

Prepare the Oatmeal Cookies:

Preheat the oven to 350F 175C and line baking sheets with parchment paper.

In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.

Beat in the eggs one at a time, then stir in the vanilla extract.

Mix the Dry Ingredients:

In another bowl, whisk together the flour, baking soda, cinnamon, and salt.

Gradually add the dry mixture to the creamed butter and sugar mixture. Stir until fully combined.

In a bowl, beat the softened butter and powdered sugar together until smooth.

Add the marshmallow creme and vanilla extract, and beat until the mixture is fluffy and well combined.

Assemble the Cream Pies:

Spread or pipe the marshmallow cream filling onto the flat side of one cookie.

Top with another cookie, pressing down gently to create a sandwich.
