Surf and Turf Skewers with Guacamole
Ingredients:
1/2 lb shrimp, peeled and deveined
1/2 lb beef steak, cut into cubes
1 red onion, cut into chunks
1 red bell pepper, cut into chunks
2 tbsp olive oil
1 tsp garlic powder
1 tsp smoked paprika
Salt and black pepper, to taste
Fresh cilantro, chopped, for garnish
For the Guacamole:
2 ripe avocados
1 small tomato, diced
1/4 cup red onion, finely chopped
1 lime, juiced
1 tbsp fresh cilantro, chopped
Salt, to taste
Instructions:
1. Preheat the grill to medium-high heat.
2. In a bowl, toss shrimp and beef cubes with olive oil, garlic powder, smoked paprika, salt, and black pepper.
3. Thread shrimp, beef, onion, and bell pepper onto skewers, alternating each ingredient.
4. Grill skewers for 3-4 minutes per side until shrimp is pink and beef is cooked to your liking.
5. For the guacamole, mash avocados in a bowl and mix with tomato, onion, lime juice, cilantro, and salt.
6. Serve the skewers hot, garnished with fresh cilantro, alongside the guacamole.
