Cheesy Chicken Spinach Wrap
Ingredients:
2 large tortillas
1 cup cooked chicken, diced
1 cup fresh spinach leaves
1 cup shredded cheddar cheese
1/2 cup mozzarella cheese
1 tbsp olive oil
1/4 cup diced tomatoes
Salt and pepper, to taste
Fresh parsley, for garnish
Instructions:
1. Heat olive oil in a skillet over medium heat. Add spinach and cook until wilted. Season with salt and pepper.
2. Add diced chicken and tomatoes to the skillet, mixing with the spinach. Cook for 2-3 minutes.
3. Place tortillas on a flat surface. Sprinkle cheddar and mozzarella cheese over the center of each tortilla.
4. Add the chicken and spinach mixture on top of the cheese.
5. Roll the tortillas tightly into wraps.
6. Heat a clean skillet over medium heat and grill the wraps until golden and the cheese melts.
7. Slice in half and garnish with fresh parsley before serving.
