Baked Seafood Dip with Crab, Shrimp, and Veggies
Ingredients:
1/2 lb fresh/defrosted raw shrimp
4 ounces lump or claw crab meat
1/2 cup finely diced onion
1/2 cup finely diced green bell pepper
1/4 cup finely diced celery
1 tbsp minced jalapeno
1/2 cup chopped spinach
1/4 tsp chopped parsley
1 tsp Old Bay seasoning
1-2 tbsp butter
3-4 ounces cream cheese
2 1/2 cups freshly grated Gouda cheese not smoked
1/2 cup Gruyere cheese
3 cloves garlic, minced and smashed with 1/4 tsp salt
1/8-1/4 tsp crushed red pepper flakes
Paprika to taste
Directions:
Preheat your oven to 350F.
In a cast iron skillet over medium heat, melt the butter and sauté the onion, bell pepper, celery, and jalapeno until tender.
Add spinach, mashed garlic, and Old Bay seasoning, stirring until the spinach wilts.
Add the crab and shrimp, cooking for about 1 minute, until the shrimp begins to turn opaque. Remove the skillet from heat.
Mix in the cream cheese, Gouda, and Gruyere until combined. Sprinkle with paprika.
Transfer the skillet to the oven and bake for 15 minutes, or until bubbly and golden brown.
Remove from the oven, garnish with parsley and red pepper flakes, and serve with crusty baguette slices.
