Ingredients:
– 1 cup crushed graham crackers
– 8 ounces cream cheese, softened
– 1/4 cup sugar
– 1 cup crushed pistachios
– 1/2 cup dried cranberries, chopped
– 1 teaspoon vanilla extract
– 1/4 cup melted butter
– 1/2 teaspoon salt
Instructions:
1. In a bowl, combine the crushed graham crackers, melted butter, and salt. Mix until well combined.
2. Press the crust mixture firmly into the bottom of a lined mini muffin tin to create a solid base.
3. In another bowl, beat the softened cream cheese and sugar together until smooth and creamy.
4. Add in the vanilla extract and mix well.
5. Fold in the crushed pistachios and chopped cranberries, ensuring an even distribution.
6. Spoon the cheesecake mixture on top of the crusts in the mini muffin tin, filling each cup about two-thirds full.
7. Refrigerate the bites for at least 4 hours, or until set.
8. Once set, gently pop the cheesecake bites out of the muffin tin and place on a serving platter.
9. For an extra festive touch, garnish with additional pistachios and cranberries if desired!
