Two-Ingredient Pumpkin Cake with Apple Cider Glaze

Ingredients:

For the cake:

1 box 15.25 oz spice cake mix

1 can 15 oz pumpkin puree not pumpkin pie filling

For the apple cider glaze:

1 cup 240 ml apple cider

1 cup 120 g powdered sugar

tsp ground cinnamon optional, for extra warmth

Directions:

Preheat the oven:

Set your oven to 350F 175C. Grease a 9×13-inch baking pan or line it with parchment paper.

Make the cake batter:

In a large mixing bowl, combine the spice cake mix and pumpkin puree. Stir until well blendedno need for eggs, oil, or water! The batter will be thick.

Bake:


Spread the batter evenly into the prepared pan.

Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and let the cake cool completely in the pan.

Prepare the apple cider glaze:

In a small saucepan, heat the apple cider over medium heat. Simmer until reduced by half about cup, about 10-15 minutes.

Remove from heat and whisk in the powdered sugar and cinnamon if using until smooth.

Glaze the cake:

Once the cake has cooled, drizzle the apple cider glaze over the top. Use a spoon or spatula to spread it evenly, if desired.

Serve:

Slice the cake and enjoy! Its perfect as-is or topped with a dollop of whipped cream or vanilla ice cream.
